Turkey Meatballs With Roasted Potato Salad

Ingredients
  • 1 lb ground turkey
  • ¼ cup onion, finely grated
  • 2 tbsp breadcrumbs
  • ½ tbsp salt
  • ½ tsp cayenne pepper
  • ½ tsp ground cumin
  • ¼ tsp black pepper
  • ½ tbsp olive oil
  • ½ cup fresh parsley, minced
  • ½ cup fresh dill, minced
  • 3 green onion, finely sliced
  • ½ juice of Lemon
  • 2 tbsp olive oil
  • ½ cup low sodium chicken stock
  • 1 lb baby potato
  • 1 tbsp olive oil
  • 2 cup mushrooms sliced
  • 1 tbsp olive oil
  • ½ tbsp salt
  • 1 tsp salt
Instructions
  • Layout plastic food wrap or parchment paper on a tray or large cutting board.
  • In a bowl, mix the ground turkey, ½ tbsp salt, cayenne pepper, cumin, black pepper, grated onion, breadcrumbs, ½ cup of parsley and ½ tbsp olive oil.
  • Break 1 tbsp size pieces from the mixture. Wet your hands and shape these pieces into round meatballs. Place meatballs side by side on the tray/cutting board.
  • Cut potatoes into two. Marinade with ½ tbsp salt and 1 tbsp olive oil.
  • For the potato salad sauce, mix remaining ½ cup parsley with dill, green onions, lemon juice and 2 tbsp olive oil in a large bowl. Set aside.
  • For the first basket, Press 1, select Air Fry, set the temperature to 400°F / 205°C and time to 23 Minutes.
  • For the second basket, Press 2, select Air Fry, set the temperature to 390°F / 200°C and time to 18 Minutes.
  • Select Sync Finish and Press Start. When the first basket is hot, add potatoes.
  • When the second basket is hot, place turkey meatballs to the bottom of the basket.
  • With the Turn Food signals, shake well both the potatoes and meatballs.
  • For the optional mushroom gravy sauté mushrooms with 1 tbsp of oil on medium to low heat in a hot pan. Add 1 tsp of salt.
  • When the mushrooms are cooked in about 5 Minutes, add chicken stock and let it thicken for a few minutes. When the potatoes are nicely browned, toss them with the sauce. Serve with the meatballs.
  • Top turkey meatballs with the mushroom gravy or serve with your favorite condiment.
