Ingredients
  • 2 lbs. boneless, skinless chicken breast cut into bite-sized pieces
  • 2 tbsp. olive oil
  • 4 garlic cloves, smashed
  • 3/4 cup sun-dried tomatoes in oil, drained and sliced
  • 1 tbsp. Italian seasoning
  • 2 tsp. paprika
  • 1/2 tsp. salt
  • 1 tsp. ground black pepper
  • 1 cup orzo
  • 2 cups chicken broth or water
  • 3/4 cup of heavy cream
  • 4 cups fresh spinach
  • 1 cup freshly grated Parmesan cheese
Instructions
  • Set Instant Pot to Sauté on High for 30 minutes.
  • Once hot, add in the chicken and stir. Cook for 3 minutes.
  • Add in the sun-dried tomatoes, garlic, Italian seasoning, paprika, salt, and pepper. Stir to combine ingredients and cook for an additional 2 minutes.
  • Add the orzo and chicken broth or water then stir well.
  • Cancel the sauté function and close the lid being sure the release value is in the sealed potions.
  • Pressure Cook on High for 6 minutes. Once completed manually release the pressure valve.
  • Add heavy cream along with the spinach. Stir until the spinach is wilted.
  • Add 3/4 of a cup of grated Parmesan cheese, stirring to combine.
  • Serve warm topped with the remaining Parmesan cheese. Enjoy!
