Ingredients

  • 2 lbs. boneless, skinless chicken breast cut into bite-sized pieces
  • 2 tbsp. olive oil
  • 4 garlic cloves, smashed
  • 3/4 cup sun-dried tomatoes in oil, drained and sliced
  • 1 tbsp. Italian seasoning
  • 2 tsp. paprika
  • 1/2 tsp. salt
  • 1 tsp. ground black pepper
  • 1 cup orzo
  • 2 cups chicken broth or water
  • 3/4 cup of heavy cream
  • 4 cups fresh spinach
  • 1 cup freshly grated Parmesan cheese
Step right up (or kneel right down... if you must) after tasting this flavor-packed chicken dish well known as Marry Me Chicken. Substitute the heavy cream for full-fat coconut milk to make this recipe dairy-free!

INSTRUCTIONS

  1. Set Instant Pot to Sauté on High for 30 minutes.
  2. Once hot, add in the chicken and stir. Cook for 3 minutes.
  3. Add in the sun-dried tomatoes, garlic, Italian seasoning, paprika, salt, and pepper. Stir to combine ingredients and cook for an additional 2 minutes.
  4. Add the orzo and chicken broth or water then stir well.
  5. Cancel the sauté function and close the lid being sure the release value is in the sealed potions.
  6. Pressure Cook on High for 6 minutes. Once completed manually release the pressure valve.
  7. Add heavy cream along with the spinach. Stir until the spinach is wilted.
  8. Add 3/4 of a cup of grated Parmesan cheese, stirring to combine.
  9. Serve warm topped with the remaining Parmesan cheese. Enjoy!
