Quick and Easy Kheer (Indian Rice Pudding)

Ingredients
  • 3 cups whole milk
  • 2/3 cup sugar
  • 1 cup uncooked basmati rice
  • 1/2 cup golden raisins
  • 3 whole green cardamom pods
  • 1/4 tsp salt
  • grated orange peel
  • pistachio nuts
Instructions
  • Combine milk and sugar in Instant Pot®; stir until sugar is dissolved. Add rice, raisins, cardamom and salt; mix well.
  • Secure lid and move pressure release valve to Sealing position. Press Manual or Pressure Cook; cook at high pressure 5 minutes.
  • When cooking is complete, use natural release for 10 minutes, then release remaining pressure.
  • Stir rice pudding well before serving. (Pudding will thicken upon standing.) Garnish with orange peel and pistachios.
