Cut the potatoes into thin slices. Pass through ice water and dry well. Brush them with olive oil and add salt and pepper to taste.
On the Instant Vortex control panel, press Air Fry, set the time to 6 minutes and the temperature to 300ºF / 150ºC. Press Start.
Once Add Food appears on the display, add the potatoes. Close the tray and let it cook. Halfway through cooking time, turn them over. Serve with sauce, to taste.
