Healthy Churros

Ingredients
  • 1½ cups (1 quart or 950 ml) water
  • 1 tbsp olive oil
  • 1 tbsp monk fruit or sweetener of choice
  • 1 pinch salt
  • 1⅔ cups (215 g) flour all purpose or whole-wheat
  • 1 tbsp baking powder
Instructions
  • In a bowl, sift flour and baking powder.
  • In the Instant Pot® inner pot, water, sweetener, salt, and olive oil and bring to a boil.
  • Once boiled, mix in the dry ingredients to form a homogeneous and sticky dough.
  • Place the dough in a pastry bag. Form the churros and place on a tray and freeze for 1 hour before cooking.
  • Line Instant Vortex tray with parchment paper and set frozen churros on it.
  • On the Instant Vortex control panel, press Air Fry, then set time to 12 Minutes and temperature to 355ºF (180°C). Press Start.
  • Remove the churros; drizzle your favorite sauce on them, and enjoy!
