Ingredients

  • 2 boneless, skinless chicken breast
  • ⅓ cup plain flour
  • 1 egg
  • 2⅔ cup panko breadcrumbs
  • 1 tbsp. oil
  • Salt & pepper, as needed
  • 4 oz. cabbage
  • 3 tbsp mayonnaise
  • ½ garlic clove
  • 2 brioche buns
  • 1 tsp. water
  • Chili flakes, as needed

INSTRUCTIONS

  1. Season both sides of the chicken with salt and freshly ground pepper.
  2. Set up 3 shallow dishes, one with the flour, seasoned with a pinch of salt and pepper, one with the lightly beaten egg, mixed with water, and one with the breadcrumbs.
  3. Dip the chicken in the flour, then the egg and then the breadcrumbs covering the chicken breast to form an even coating.
  4. Place the prepared chicken in the air fryer basket onto a lightly oiled rack.
  5. Select Air Fry and set the temperature to 370°F / 188°C and the time to 12 minutes. Ignore when prompted to Add Food as it will already be inside and flip the chicken over when prompted to Turn Food.
  6. While the chicken cooks make the slaw by combining the shredded cabbage with salt, pepper, mayonnaise, chili flakes and garlic in a bowl.
  7. To plate up, smear some mayonnaise on the base of your roll, then top with your chicken and slaw and serve immediately.
