Ingredients

  • For the Beef
  • 2 tbsp. vegetable oil
  • 1 large onion, sliced
  • 1 ½ lb. beef chuck, cut into 1-inch cubes
  • 2 medium carrots, cut into matchsticks
  • 1 tsp. cumin seeds
  • 1 tsp. plov seasoning
  • ½ tsp. black pepper
  • 1 ½ tsp. kosher salt
  • 1 whole head garlic
  • ¼ cup raisins (optional)
  • ¾ cup water
  • For the Rice
  • ½ tsp saffron threads
  • 3 tbsp. hot water
  • 2 cups basmati rice, rinsed until water runs clear
  • 2 ½ cups water
  • 1 tsp. salt
  • 1 tbsp. oil
  • 2 tbsp. butter
  • 1 can (15 oz.) chickpeas, drained and rinsed

Tender pressure-cooked beef, sweet carrots, and aromatic spices served over fluffy saffron rice. This simplified beef pilaf combines the rich flavors of traditional plov with perfectly cooked saffron rice and chickpeas. 

INSTRUCTIONS

  1. In a small bowl, bloom the saffron in 2 tbsp. of hot water and set aside for 10 minutes
  2. Meanwhile, select Sauté on the 4QT Main Pot and add the oil. Add the sliced onion and cook until softened and golden. Add the beef and brown on all sides.
  3. When the meat is browned, stir in the carrots, cumin, plov seasoning, black pepper, and salt. Cook for 2-3 minutes, then add the garlic head, raisins, and water. 
  4. Add the rinsed rice, water, chickpeas, butter, oil, salt and saffron water to the 2QT Side Pot. Stir once to combine. 
  5. Close and seal both lids. 
  6. Select Zone 1 on the left side of the control panel to set the Main Pot. Use the dial to navigate to Pressure Cook, then press the dial to select. Set the cooking time to 35 minutes, then press the dial again to confirm. 
  7. Select Zone 2 on the right side of the control panel to set the Side Pot. Use the dial to navigate to White Rice, then press the dial to select. 
  8. With both zones set, press the Serve Together™ icon to activate the function. 
  9. Press Start. The Dual Action's Serve Together™ Smart Timing will automatically stagger cooking schedules so both pots finish at the same time. 
  10. When cooking is complete, allow the Main Pot to naturally release pressure for 10 minutes, then release any remaining pressure. 
  11. Fluff the rice with a fork and serve alongside the beef. Serve immediately, garnished with the softened garlic cloves.
