Ingredients

  • 2 tbsp. unsalted butter
  • 3 tbsp. brown sugar
  • 1 ripe banana, thinly sliced
  • ½ tsp. rum extract
  • 1 cup heavy whipping cream
  • ⅔ cup whole milk
  • ⅓ cup granulated sugar
  • 1 tsp. vanilla extract
  • Pinch of fine sea salt

Caramelized banana, brown sugar, and a hint of rum extract folded into fresh cream rolls right on the cold plate. All the drama of the classic New Orleans dessert, reimagined as a rolled ice cream you can make at home in minutes with the InstantChill™ Ice Cream Maker.

INSTRUCTIONS

  1. In a small pan over medium heat, melt the butter and brown sugar together until bubbling. Add the sliced banana and cook for 2–3 minutes until softened and caramelized. Add the rum extract, stir, and remove from heat. Let cool completely.
  2. In a bowl, whisk together the heavy whipping cream, whole milk, granulated sugar, vanilla, and salt until smooth and the sugar is dissolved.
  3. Use the Rolled Ice Cream program, letting the Cold Plate chill for at least 5 minutes.
  4. Pour ¼–⅓ cup of the base mixture onto the Cold Plate. Immediately add a spoonful of the caramelized banana mixture on top.
  5. Using the two Rolled Ice Cream Paddles, spread and fold continuously until the mixture thickens into a smooth, creamy consistency with banana pieces folded throughout.
  6. Knead quickly with both Paddles, chopping and folding to evenly cool and aerate.
  7. Spread the mixture into a thin, even rectangle about ⅛-inch thick.
  8. Let it sit for 20–30 seconds until matte and firm.
  9. Hold one Paddle at a 45-degree angle and push steadily forward to create rolls.
  10. Transfer the rolls into a cup or bowl. Top with any remaining caramelized banana and a drizzle of the brown sugar sauce from the pan.
  11. Scrape the plate and repeat with remaining mixture.
