If you love BIG, BOLD flavors — this one is for you! This Zesty Tajín® Beef Stew is spicy, citrusy, and fall-apart tender. It’s easy to make, and it might just be your new favorite Instant Pot® meal! Serve it over rice, in tacos, or straight from the pot!
INSTRUCTIONS
- Marinate the beef with Tajín®, smoked paprika, cumin, salt, and pepper for at least 30 minutes to absorb the flavors.
- Set the Instant Pot® to Sauté on High.
- Add oil to the pot and brown the beef on all sides in batches. Set aside.
- Add the onion and garlic to the pot and Sauté for 2-3 minutes until fragrant.
- Add a splash of broth to deglaze the bottom and stir in the tomato paste.
- Return the beef to the pot, then add the rest of the broth.
- Stir well to combine, then press Cancel to turn off Sauté mode. Seal the Instant Pot® and Pressure Cook on High for 35 minutes.
- Let the pressure naturally release for 10 minutes, then quick release the rest.
- Turn on Sauté mode again and stir in the corn. Let it simmer for 5 minutes.
- Serve over rice or your favorite sides and top with an extra sprinkle of Tajín®.
