Ingredients

  • For the Ginger, Lime & Cinnamon Simple Syrup
  • 13 inches ginger root, chopped
  • Zest of 1 lime
  • 2 cinnamon sticks
  • 1 cup sugar
  • 1 ¼ cup cold water
  • For a Mocktail
  • 55 ml. cranberry juice
  • 30 ml. orange juice
  • 25 ml. pomegranate juice
  • 25 ml. ginger, lime & cinnamon simple syrup
  • 15 ml. lime juice
  • For the Garnish
  • 1 lime, thinly sliced

A bright blend of cranberry, pomegranate, citrus and warming spice, this festive sipper is built for holiday hosting. The 4QT RIO™ Mini Multi-Cooker brings the spiced syrup to life and the 4QT VORTEX® Mini Air Fryer makes the crisp lime garnish that finishes the look. Easy to batch, endlessly adaptable and delicious with or without a splash of bourbon.

INSTRUCTIONS

  1. To make the garnish, thinly slice 1 lime into even rounds. Place the slices in the air fryer in a single layer. Air Fry at 135°F / 57°C for 45-60 minutes on the Dehydrate setting, or until the slices are completely dry and crisp. Store in an airtight container.
  2. To make the syrup, add the ginger root, lime zest, cinnamon sticks, sugar, and cold water to the Instant Pot. Set to Sauté on High and stir until the sugar is dissolved. Cancel Sauté, secure the lid, and Pressure Cook on High for 0 minutes. Quick release the pressure, strain out the solids, and let the syrup cool. Store in an airtight container in the refrigerator for up to a week.
  3. To make yourself a drink, fill a cocktail shaker with ice. Add all ingredients and shake vigorously for 15-20 seconds. Strain into a glass filled with fresh ice. Garnish with a dehydrated lime slice.

Notes

For a cocktail, add one shot of dark liquor to the shaker. We recommend a sweet bourbon.
