Add clementine halves, lemon peels, sliced apples, raisins, dates, cloves, nutmeg, star anise, black peppercorn, and water to the Precision Dutch Oven.
Set the temperature to 200°F / 93°C and cook for one hour.
After one hour, add the reserved lemon juice and brown sugar.
Gently smash the cooked clementines and apples. Stir to combine.
Pour the brew over a fine mesh strainer.
Return the strained brew back to the pot to keep warm.
