Wild Quinoa

Ingredients
  • 3 tsp. olive oil
  • ½ tsp. cinnamon powder
  • ¼ tsp. turmeric
  • ⅛ tsp. black pepper
  • Salt, to taste
  • 1 tsp. fresh ginger, grated
  • 1 carrot, grated
  • 4 small mushrooms, chopped
  • 1 cup broccoli, cut into florets
  • 2 red cabbage leaves, finely chopped
  • 1 cup quinoa
  • 2 cups water
  • Pumpkin seeds, for serving
  • Sunflower seeds, for serving
Instructions
  • Place the stainless steel inner pot inside the Instant Pot®. Add the oil, seasonings, vegetables, quinoa and water. Stir carefully to mix the ingredients.
  • Close and lock the Instant Pot® lid. Make sure the steam release handle is turned to Sealing. Pressure Cook on High for 6 minutes.
  • When done cooking, press Cancel and then turn the steam release handle to Venting.
  • Open the lid and serve.
