Wild Quinoa

Ingredients
  • 3 tsp olive oil
  • 1 tsp fresh ginger, grated
  • ½ tsp cinnamon powder
  • ¼ tsp turmeric
  • ⅛ tsp black pepper
  • Salt
  • 1 carrot, grated
  • 4 small mushrooms
  • 1 cup broccoli, cut into florets
  • 2 red cabbage leaves, finely chopped
  • 1 cup quinoa
  • 2 cups water
  • Pumpkin seeds for serving
  • Sunflower seeds for serving
Instructions
  • Place the stainless steel inner pot inside the Instant Pot®. Add the oil, seasonings, vegetables, quinoa and water. Stir carefully to mix the ingredients.
  • Close and lock the Instant Pot® lid. Make sure the steam release handle is turned to Sealing. Press Pressure Cook, pressure level High, and set time to 6 minutes.
  • When done cooking, press Cancel and then turn the steam release handle to Venting.
  • Open lid and serve.
