Vegetable Fried Rice


  • 2 tablespoons olive oil
  • 1/2 medium white onion
  • 1/2 medium carrot
  • 2 large eggs
  • 2 cups cooked white rice
  • 1 cup frozen peas
  • 2 tablespoons soy sauce
  • Press Sauté button on Instant Pot®. Add the oil and allow it to heat up.
  • Add onion and carrot to Instant Pot®. Cook until vegetables are soft, 5 minutes. Stir occasionally.
  • Move vegetables to side of pot and pour beaten eggs into empty spot in the Instant Pot®. Scramble eggs in the pot 3 minutes.
  • Pour in rice and peas. Stir and then cook an additional 2 minutes.
  • Mix in the soy sauce and turn Instant Pot® off.
  • Serve immediately.
