Tamari Braised Tofu

Ingredients
  • 2 bars firm tofu
  • 2 tbsp garlic, minced
  • 1/2 cup ginger, sliced
  • 50 g scallion, green parts
  • 70 g tamari
  • 455 g shiitake mushrooms, quartered
  • 2 stem leek rinsed, quartered lengthways, chopped
  • 225 g carrot peeled, small
  • 4 celery ribs, chopped
  • 1 head Napa cabbage, chopped
  • 960 ml vegetable stock
  • 2 tbsp extra-virgin olive oil
  • 45 g Gluten-free panko breadcrumbs
  • Kosher salt, as needed
  • Black pepper as needed, freshly ground
Instructions
  • Place all the ingredients in the cooker with the tofu on top for the braise.
  • Lock and secure the lid. Pressure cook for 10 Minutes on low.
  • Once braised, top with the EVOO, green scallions, Panko, salt, and pepper
  • Air fry for 5 Minutes until gold, brown, and delicious.
