Ingredients

  • 2 bars firm tofu
  • 2 tbsp garlic, minced
  • 1/2 cup ginger, sliced
  • 50 g scallion, green parts
  • 70 g tamari
  • 455 g shiitake mushrooms, quartered
  • 2 stem leek rinsed, quartered lengthways, chopped
  • 225 g carrot peeled, small
  • 4 celery ribs, chopped
  • 1 head Napa cabbage, chopped
  • 960 ml vegetable stock
  • 2 tbsp extra-virgin olive oil
  • 45 g Gluten-free panko breadcrumbs
  • Kosher salt, as needed
  • Black pepper as needed, freshly ground
This tamari braised tofu is an easy, flavorful way to start the year right!

INSTRUCTIONS

  1. Place all the ingredients in the cooker with the tofu on top for the braise.
  2. Lock and secure the lid. Pressure cook for 10 Minutes on low.
  3. Once braised, top with the EVOO, green scallions, Panko, salt, and pepper
  4. Air fry for 5 Minutes until gold, brown, and delicious.
