Sweetgreen Harvest Salad Dupe


  • 1 chicken breast
  • 1 medium sweet potato, diced
  • 2 tsp olive oil
  • 2 cups kale destemmed and sliced into ribbons
  • ½ cup wild rice, cooked
  • ½ honey crisp apple, diced
  • 3 oz goat cheese, crumbled
  • ¼ cup almonds, slivered
  • 2 tbsp basil leaves, chiffonade
  • 1 tsp salt
  • Balsamic vinaigrette, as needed
  • Black pepper as needed
  • Add 1 tsp salt and 1 tsp freshly ground black pepper to the chicken breast. Air fry at 400°F / 205°C for 14-15 Minutes, or until cooked through and golden brown. Let cool for 5 Minutes then dice. Set aside.
  • Toss the sweet potato with the olive oil then Air Fry at 400°F / 205°C for 7-8 Minutes, or until golden brown. Set aside.
  • Add all ingredients, including the chicken and sweet potato, to a large mixing bowl and toss to combine with the dressing. Serve and enjoy!
