These Air Fryer Sweet Potato Pizza Bites are the perfect fusion of crispy and cheesy! The sweet potato medallions are lightly drizzled with olive oil and seasoned with Italian spices, then air-fried until golden and crispy. Each bite is topped with savory pizza sauce, melty mozzarella cheese, and mini pepperoni, creating a pizza-like experience with a healthy twist. INSTRUCTIONS
- Preheat your air fryer to 350°F / 176°C for 15 minutes.
- Slice the sweet potatoes into ¼-inch medallions and arrange them on a plate.
- Brush each sweet potato medallion with olive oil and sprinkle with Italian seasoning.
- Once the air fryer is preheated, place the sweet potato slices into the basket in a single layer. Air Fry for 15 minutes.
- When the cooking program is complete, open the basket and top each slice with pizza sauce, cheese, and pepperoni.
- Air Fry for an additional 5 minutes, or until the cheese is melted and bubbly.
- Remove from the air fryer and garnish with chopped basil.
- Repeat the process until all pizza bites are cooked.
- Serve warm with ranch dressing or your favorite dipping sauce. Enjoy!
