Place the stainless steel inner pot inside the Instant Pot®. Press Saute and set time to 10 Minutes. Add the oil; once hot, add the meat, pepper and cumin. Stir-fry for about 5 Minutes, then add the onion, tomato, soy sauce, vinegar and, lastly, the chopped coriander. Set aside until cooled.
Place filling in the wonton dough; use beaten egg to seal the tequeños.
On the Instant Vortex control panel, press Air Fry, then set time to 7 Minutes and temperature to 355ºF (180°C). Spray the basket with a little oil and place the tequeños inside the basket. Press Start.
Carefully remove the tequeños and serve with guacamole sauce.
