Ingredients
  • 3 tbsp olive oil
  • 4 garlic cloves, minced
  • 2 tsp red pepper flakes
  • 2 cups dry white wine
  • 1 3/4 cups water
  • 1 lb. spaghetti, broken in half
  • 16 littleneck clams, scrubbed and cleaned
  • 2 tsp salt
  • 1 tsp black pepper
  • ¼ cup fresh parsley, chopped
  • Juice of 2 lemons, for serving
Instructions
  • Set the Instant Pot to Sauté mode. Add olive oil, garlic, and red pepper flakes, and sauté until fragrant, about 1 minute.
  • Add the white wine and scrape up any browned bits from the bottom of the pot. Simmer for 2 minutes to reduce slightly.
  • Layer the spaghetti over the wine mixture, breaking in half if necessary, then pour in the water, ensuring the pasta is mostly submerged. Add salt and black pepper, and stir until the pasta is coated. Place the clams on top of the pasta.
  • Seal the Instant Pot lid and set to Pressure Cook on High for 3 minutes. Once complete, allow a natural release for 4 minutes, then flip the valve to release any remaining pressure and carefully open the lid.
  • Toss to combine, letting the pasta soak up excess liquid with the residual heat. Add the chopped parsley and lemon juice. Season to taste. Enjoy immediately!
