  • Garlic minced
  • 1 pinch salt
  • 1 pinch of ground pepper
  • 1 red pepper diced
  • 1 tsp paprika
  • 1 tsp cayenne pepper
  • Tomato sauce/paste
  • 4 eggs
  • Parsley to taste
  • Place the stainless steel inner pot inside the Instant Pot®. Press Saute and set time to 30 Minutes.
  • Pour in the oil and, once hot, add the onion, garlic, salt, ground pepper, red pepper, paprika, and cayenne pepper. With a silicone spatula, stir to incorporate the ingredients.
  • Add the tomato paste and using a measuring cup, add the eggs one by one, making sure not to let them touch. Add parsley to taste.
  • Close and lock the Instant Pot® lid. Make sure the steam release handle is turned to Sealing.
  • Once the time is up, press Cancel and turn the steam release handle to Venting. Remove the Instant Pot® lid and serve.
