Ingredients
  • ½ cup cocoa powder
  • ¾ cup granulated sugar
  • ¼ cup light brown sugar
  • 6 tbsp. melted butter
  • 1 tsp. vanilla extract
  • 2 eggs
  • 2 tsp. cornstarch
  • 1 cup all-purpose flour
  • 1 tsp. baking powder
  • ½ tsp salt
  • ⅓ cup powdered sugar
Instructions
  • In a medium mixing bowl, whisk together the cocoa powder, both sugars, melted butter and vanilla extract. Add in the eggs and whisk until smooth.
  • Sift in the flour, cornstarch, baking powder and salt and whisk until combined. The dough will be soft so cover the bowl with saran wrap and chill for 45-60 minutes.
  • After the dough has chilled, set the Instant Pot Air Fryer Vortex Plus to Bake at 350°F / 177°C. Scoop the dough and roll in the remaining powdered sugar. Place 4 of the dough balls into the preheated air fryer basket and bake for 10-12 minutes, or until the edges are set. Repeat until all the cookies are made. Enjoy!
