Red Chili


  • 4 slices bacon
  • 1/2 pound 85% lean ground beef
  • 1/2 pound 84% lean ground pork
  • 1 green pepper
  • 1/2 medium onion
  • 2 cups beef broth
  • 14.5 ounce diced tomatoes
  • 6 ounce tomato paste
  • 1 tbsp chili powder
  • 2 tsp salt
  • 1/2 tsp pepper
  • 1/8 tsp cayenne
  • 1/4 tsp xanthan gum
  • Press the Sauté button and cook bacon. Remove bacon, crumble, and set aside. In bacon grease, brown beef and pork until fully cooked. Add green pepper and onion to Instant Potâ and allow to soften for 1 minute.
  • Press the Cancel button and add remaining ingredients except xanthan gum to pot. Click lid closed. Press the Soup button and adjust time for 30 minutes. Allow a 10-minute natural release and then quick-release the remaining pressure. Stir in cooked bacon. Serve warm with favorite chili toppings.
  • For thicker chili, remove lid when timer goes off and press the Sauté button. Add xanthan gum and reduce chili, stirring frequently, until desired thickness. Top with additional diced onions or other toppings.
