Rasta Pasta takes inspiration from the flavors of Jamaica and the Rastafarian movement. It is a Caribbean-inspired pasta dish featuring colorful bell peppers and jerk-seasoned chicken.

Ingredients
  • 2 tbsp avocado oil
  • 1 white onion, sliced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 2 large chicken thighs, cubed
  • 3 cloves garlic minced
  • 1 pouch of A Dozen Cousins Jamaican Jerk Entrée Seasoning Sauce
  • 1 lb penne pasta
  • 1 ½ cups vegetable or chicken stock
  • ½ cup heavy cream
  • ½ cup parmesan
  • Salt and pepper to taste
Instructions
  • Chop onion, bell pepper, and garlic. Cube chicken thighs into bite size pieces.
  • Set Pressure Cooker on High Sauté and once preheated, add 1 tbsp of avocado oil.
  • Add onion, bell pepper, chicken, and 1 pouch of A Dozen Cousins Jamaican Jerk Entrée Seasoning Sauce. Sauté for 10 Minutes. Add garlic and Sauté for an additional 2 Minutes.
  • Turn Instant Pot® off and add the dried pasta to the pot, along with the stock. Stir to combine.
  • Cover and cook on high pressure for 5 Minutes.
  • Once timer is done, quick release the pressure.
  • Open lid and add heavy cream and parmesan. Stir to combine.
  • Season to taste.
