Rasta Pasta takes inspiration from the flavors of Jamaica and the Rastafarian
movement. It is a Caribbean-inspired pasta dish featuring colorful bell peppers and
jerk-seasoned chicken.
1 pouch of A Dozen Cousins Jamaican Jerk Entrée Seasoning Sauce
1 lb penne pasta
1 ½ cups vegetable or chicken stock
½ cup heavy cream
½ cup parmesan
Salt and pepper to taste
Instructions
Chop onion, bell pepper, and garlic. Cube chicken thighs into bite size pieces.
Set Pressure Cooker on High Sauté and once preheated, add 1 tbsp of avocado oil.
Add onion, bell pepper, chicken, and 1 pouch of A Dozen Cousins Jamaican Jerk Entrée Seasoning Sauce. Sauté for 10 Minutes. Add garlic and Sauté for an additional 2 Minutes.
Turn Instant Pot® off and add the dried pasta to the pot, along with the stock. Stir to combine.
Cover and cook on high pressure for 5 Minutes.
Once timer is done, quick release the pressure.
Open lid and add heavy cream and parmesan. Stir to combine.
