Plantain Quesadillas with Beans and Cheese

Ingredients

  • 2 large ripe plantains
  • 1¼ cup cornmeal
  • pinch of salt
  • water only if you think it is necessary
  • Mashed Beans
  • Oaxaca-type cheese
  • avocado oil
  • sour cream cotija cheese lettuce and hot sauce

INSTRUCTIONS

  1. Boil the plantains with enough water for 15 minutes or until they are soft. Let cool slightly.
  2. Transfer to a bowl and flatten with a potato masher and add flour little by little until a manageable dough forms. If you think it necessary, add more water.
  3. Using a tortilla press, make tortillas and fill with beans and Oaxaca-type cheese. Brush or spray with avocado oil.
  4. On the Instant Vortex control panel, press Air Fry, set time to 10 Minutes and temperature to 375°F (190°C). Press Start.
  5. When Add Food appears on the display, add the quesadillas and close the tray.
  6. When Turn Food appears on the display, flip and, if necessary, spray with more oil.
  7. Serve and accompany with sour cream, cotija cheese, lettuce, and hot sauce.
