Ingredients
  • 1 boneless rib-eye steak
  • 1/2 red bell pepper, julienned
  • 1/2 orange bell pepper, julienned
  • 1/2 green bell pepper, julienned
  • 1/2 yellow onion, julienned
  • 1 tbsp olive oil
  • 1 1/2 cups shredded provolone cheese
  • 2 containers Pillsbury crescent rolls
  • Salt, as needed
  • Freshly ground black pepper, as needed
Instructions
  • Place the ribeye steak in the freezer for 15 minutes to firm up for easier slicing.
  • Slice the steak into very thin strips against the grain, then cut those strips in half, creating 2 - 2 ½ inch pieces. Toss liberally with salt and freshly ground black pepper.
  • Air fry at 400°F / 200°C for 10-12 minutes, until browned and crispy. Transfer to a bowl and set aside.
  • In a separate bowl, toss the bell peppers and onion with 1 teaspoons salt and olive oil. Air Fry at 400°F / 200°C for 12-14 minutes, or until wilted and slightly charred.
  • Unroll the Pillsbury crescent dough and separate into triangles. Place 1-2 teaspoons shredded provolone at the widest part of each triangle.
  • Layer 1-2 strips of beef and a few slices of peppers and onions on top of the cheese. Start at the wide end of the crescent dough and gently fold over the filling, tucking the edges slightly as you roll toward the narrow tip. Ensure the dough is wrapped tightly to keep the filling inside.
  • Sprinkle each roll with additional shredded provolone.
  • Air fry at 350°F / 175°C for 5 minutes, or until golden brown and the cheese is melted. Repeat with additional rolls as needed. Serve warm or room temperature, and enjoy!
