Perfect Risotto


  • 1/4 cup butter
  • 1 yellow onion
  • 2 cups Arborio rice
  • 1/2 cup dry white wine
  • 5 cups stock
  • 1 tsp salt
  • 1/2 cup parmesan
  • Black pepper to taste
  • Peel and dice one medium yellow onion.
  • Melt butter in the Instant Pot on the Sauté, More.
  • Add the diced onion and cook for 3-5 minutes, until the onion is translucent and fragrant.
  • Add Arborio rice and cook for 1-2 minutes.
  • Add dry white wine, scraping the bottom of the pan to ensure nothing is sticking.
  • Add any flavored stock (chicken, beef, or vegetable), along with salt, stir to combine.
  • Pressure Cook on High for 5 minutes. When the time is up, allow for 10 minutes natural release, then carefully quick-release the rest of the pressure.
  • Add grated parmesan, stir to combine, add any additional salt and pepper to taste.
  • Serve warm as a main for lunch or dinner.
