Patacones (Twice-Fried Plantains)

  • 1 green or semi-ripe plantain
  • 2 tbsp oil
  • salt
Instructions
  • Peel the plantain and cut straight (not diagonally). Depending on the size, you should get 5-6 chunks.
  • Place plantain chunks in a bowl, brush with oil, salt lightly and place on top of the rack.
  • On the Instant Vortex control panel, press Air Fry, then set time to 10 Minutes and temperature to 355°F (180°C).
  • Once cooked, remove the plantain chunks, place them on an oiled board and smash them using a jar lid or a pataconera (plantain press).
  • Once pressed, brush with some oil and salt.
  • On the Instant Vortex control panel, press Air Fry, set time to 5 Minutes and temperature to 355ºF (180°C).
  • Lastly, remove the patacones and serve with cocona chili or other dipping sauce of your choice.
