Take your Bone-in Prime rib and remove any large pieces of hard fat.
Season the prime rib with salt, black pepper and garlic powder. Make sure to rub the seasoning into the meat and fat.
Use the kitchen twine to tie together the prime rib.
Place one of the Rotisserie Forks at one end of the Rotisserie Spit. Insert the Rotisserie Spit lengthwise, through the roast and push it firmly onto the fork. Attach the other Rotisserie Fork to the other end, make sure to push it into the meat so that it is tightly secured between the two forks. Ensure that the weight is distributed evenly.
Place the Rotisserie Spit into the oven, by inserting the pointed end into the rotisserie catch and the other side into the side holder. Close the door.
For Omni Plus model: Select ROAST function. Set temperature to 400°F and set time for 15 minutes then press START . After the roast has cooked for 15 minutes, select ROAST , set temperature to 300° and set time to 30 minutes , then press START .
For Omni Pro model: Select ROAST function. Set temperature to 400°F and set time for 15 minutes. Touch SPLITCOOK function twice. As the number 2 next to the split cook function blinks, select ROAST function. Set the temperature to 300°F and time to 30 minutes. Press START.
Once the cooking cycle has completed, select Cancel. Take the internal temperature and make sure it has reached a minimum of 120° F. While you let it rest the residual heat will cook to the desired 130° F for medium-rare.
Take the roast out with the help of the Rotisserie Handle. Place on a large plate or heat-resistant cutting board. And let rest for 10 minutes.

Chef’s tip: Let the prime rib rest at room temperature for at least 45 minutes and a maximum of 2 hours prior to cooking.
