Olluco Stew


  • 2 cups of olluco cut into strips, peruvian tuber
  • 1½ cup pumpkin
  • 1 ear corn, sliced
  • ⅓ cup fava beans
  • 3 yellow potatoes, peeled
  • 2 sprigs huacatay
  • ½ cup evaporated milk
  • Water
  • Salt, to taste
  • 1 fried egg and chopped coriander
  • Place the stainless steel inner pot inside the Instant Pot®. Add water, olluco, pumpkin and corn.
  • Close and lock the Instant Pot® lid. Make sure the steam release handle is turned to Sealing. Press Soup/Broth and set time to 15 Minutes.
  • Once the olluco is cooked, add the potatoes, the beans and the huacatay sprigs.
  • Remove the huacatay sprigs, add salt and incorporate the evaporated milk.
  • Serve with fried egg and sprinkle with chopped coriander.
