INSTRUCTIONS Place the stainless steel inner pot inside the Instant Pot®. Add water, olluco, pumpkin and corn. Close and lock the Instant Pot® lid. Make sure the steam release handle is turned to Sealing. Press Soup/Broth and set time to 15 Minutes. Once the olluco is cooked, add the potatoes, the beans and the huacatay sprigs. Remove the huacatay sprigs, add salt and incorporate the evaporated milk. Serve with fried egg and sprinkle with chopped coriander.
