Place the stainless steel inner pot inside the Instant Pot®. Press Saute and set time to 10 Minutes . Add the oil. Once hot, add the onion, then the garlic. Stir fry 3 minutes or until the onion is translucent. Add the ají panca, cook for a couple of minutes, then add the coriander. And lastly, add the pepper, cumin, and oregano. Press Cancel .
Put in the marinated meat along with half of the corn beer, grated loche squash, and peas. Close and lock the Instant Pot® lid. Make sure the steam release handle is turned to Sealing. Press Meat/Stew and set time to 15 Minutes.
Finally, serve the beef stew with rice and, optionally, also beans and salsa criolla.
