Chicken Stuffed with Pesto and Wrapped in Prosciutto

Ingredients

  • 4 boneless chicken breasts
  • 4 tsp basil pesto
  • ½ lb (200 g) prosciutto
  • Toothpick

INSTRUCTIONS

  1. Using a knife, butterfly each chicken breast by making a horizontal cut so that there are two pieces joined in the center.
  2. Spread the chicken out on a large cutting board and add a tsp of pesto in the center, spreading well. Add a slice of prosciutto and, starting from the edge, start wrapping the chicken breast to make a roll. Wrap this roll in a slice of prosciutto. Using 3-4 toothpicks, secure the prosciutto to the chicken so that it retains its shape.
  3. On the Instant Vortex control panel, press Roast , then set time to 10 Minutes and temperature to 400°F (205°C) . Press Start .
  4. When Add Food appears on the display, add the chicken breasts. Put the basket back in the Instant Vortex.
  5. Once done, remove the breasts and put them on a wooden carving board.
  6. Cut into ¾” (2 cm) wide pieces and serve as a snack or as a main course.
