In the bowl of a stand mixer, combine room temperature whole milk, yeast, and 2 tbsp of the sugar. Allow the yeast to bloom for 5 Minutes, or until frothy and fragrant.
With the dough hook, beat in the eggs, melted butter, salt, vanilla, and sugar until combined.
Slowly incorporate the flour on low speed until a soft, pliable dough forms. Add in 1 tbsp of flour at a time if it’s too sticky to handle, or 1 tbsp of milk at a time if it is crumbly.
Knead the dough on medium speed for 3-4 Minutes until smooth. Place in a clean mixing bowl, cover with plastic wrap, and allow to rise in a warm place for two hours or until doubled in size.
Lightly flour the work surface and roll dough to a ½ inch thick square.
Cut the dough into equal 2x2 inch squares.
Preheat on the Air Fry function. Place beignets in a single layer, careful not to overlap. Spray with vegetable oil spray.
Air Fry at 330°F for 9-11 Minutes, or until lightly golden.
Meanwhile, in a medium mixing bowl add the powdered sugar. When the beignets are done, immediately toss in the powdered sugar bowl.
Continue air frying until all beignets are cooked.
