Mussels in White Wine

Ingredients

  • 1 tbsp olive oil
  • ½ cup onion
  • ⅓ cup chives, chopped
  • 1 clove garlic. minced
  • ½ red bell pepper, diced
  • 2 lb fresh mussels with shell well washed, without the beard, 1 kg
  • 1 cup white wine
  • 1 ½ cups water
  • 1 tsp salt
  • Cilantro, as garnish
  • Lemon, for serving

INSTRUCTIONS

  1. Place the stainless steel inner pot inside the Instant Pot®. Press Saute and set cook time to 3 Minutes. Add 1 tbsp olive oil, onion, chives, garlic, and pepper.
  2. Once done, add the mussels. Add the cup of white wine and a cup of water. Add ½ tsp of salt.
  3. Close and lock the Instant Pot® lid. Make sure the steam release handle is turned to Sealing. Press Pressure Cook, pressure level High, and set time to 4 Minutes.
  4. Once the time is up, let the steam release naturally or turn the steam release handle.
  5. Once all the pressure is released, open the lid and serve the mussels with the broth. You can add lemon and cilantro to garnish.
