Allow the puff pastry to sit at room temperature for 15 minutes, or until you can easily unfold. Prepare a small baking sheet by lining with wax or parchment paper and set aside.
Lightly dust a countertop with flour and unfold the puff pastry. Use a pizza cutter or knife to cut 5 4-inch squares.
In the center of each square add 1 teaspoon of honey, ensuring the honey stays in the center and doesn’t go to the edge of the dough.
Use a sharp knife to make shallow, evenly spaced slits across the top of the chilled mini brie rounds, being careful not to cut through the bottom
Place the brie rounds on top of the honey, again ensuring the honey doesn't run off the edges of the dough. Add about 1 teaspoon of cranberry sauce or jam on top of the brie.
In a small bowl whisk together the egg and milk to create an egg wash.
Fold up one corner of the dough to the center of the brie and gently press so it stays. Use a pastry brush to cover the folded up side in egg wash.
Fold the next corner up, slightly overlapping the first fold and gently press to seal. Repeat with egg wash and remaining corners. The end result will look like a small square envelope! Place the brie bites on the prepared pan lined with wax or parchment paper and place in the refrigerator for 15 minutes.
Select Air Fry on the appliance and preheat to 375°F / 191°C. When preheated, add the brie bites to the basket, spacing evenly apart, and cook for 15 minutes. Remove from the air fryer and allow to cool for 3 minutes before serving. Drizzle with additional honey if desired! Enjoy!
