Melted Avocado Toast


  • 2 slices of bread of your choice I used ciabatta
  • 1 ripe avocado
  • ½ cup Manchego cheese
  • ½ cup sliced cherry tomatoes
  • 2 tbsp coriander finely chopped
  • 1 serrano pepper deveined and finely chopped
  • ½ lemon juice
  • 2 tbsp olive oil
  • Salt to taste
  • Mix sauce ingredients and set aside.
  • Cut the avocado into slices and place it on top of the bread; then add the Manchego cheese.
  • On the Instant Vortex control panel, press Roast, set the time to 6 Minutes and temperature to 400˚F (205˚C). Press Start.
  • Serve the bread hot, accompany with the sauce and enjoy!
