Ingredients

  • 2 lb. 80/20 ground beef
  • 1/2 medium yellow onion, finely chopped
  • 1 large egg
  • 3/4 cup Italian-style bread crumbs
  • 2 tsp. Italian seasoning blend
  • 1/2 tsp. garlic powder
  • 1 tsp. salt
  • 1/2 tsp. ground black pepper
  • 2 tbsp. light brown sugar
  • 1/2 cup ketchup
  • 1 tsp. apple cider vinegar
  • 1 cup water
This classic comfort dish steams perfectly in the Instant Pot®. Pair it with steamed vegetables and petite golden potatoes. For your own twist, try swapping ketchup with your favorite barbecue or chili sauce. For a caramelized top, open the aluminum foil packet at the very end and place it on a baking sheet. INSTRUCTIONS

  1. In a large bowl, mix beef, onion, egg, and bread crumbs. Add Italian seasoning, garlic powder, salt, and pepper and mix until well combined. Form mixture into a 6" × 4" loaf shape, about 1" in height.
  2. In a small bowl, whisk together brown sugar, ketchup, and vinegar, and brush mixture over loaf.
  3. Wrap loaf tightly in aluminum foil. Pour water into an Instant Pot® and place the trivet in the pot, then place wrapped loaf on trivet. Place the lid on the Instant Pot® and click into place to close. Press the Pressure Cook button and adjust the timer to 25 minutes.
  4. When the timer beeps, let the pressure naturally release for 10 minutes then quick release any remaining pressure until the float valve drops. Unlock lid. When done, meatloaf will have an internal temperature of at least 160°F / 71°C. Remove from pot and allow to rest 10 minutes before slicing. Serve warm.
