Lomo Saltado is a popular dish in Peru that reflects the country’s culinary diversity, combining Chinese cooking techniques with Peruvian flavors. Lomo Saltado is a Peruvian stir-fry, blending marinated beef, onions, tomatoes, and spices, served with french fries and rice.

Ingredients
  • 1 tbsp avocado oil
  • 1 large red onion, sliced
  • 1 lb sirloin steak, sliced into strips
  • 2 garlic cloves minced
  • 1 pouch of A Dozen Cousins A La Brasa Pollo Seasoning Sauce
  • 1/3 cup beef stock
  • 1 tbsp soy sauce
  • 1 tbsp white vinegar
  • 4 roma tomatoes, sliced into wedges
  • 1 lb fries, (can be frozen)
  • A Dozen Cousins Sea Salt Bone Broth Rice
  • Cilantro chopped
Instructions
  • Chop onion, garlic, and tomatoes. Slice steak into strips.
  • Set Pressure Cooker on High Sauté and once preheated, add 1 tbsp of avocado oil.
  • Add onion and steak and Saute for 5-8 Minutes, or until beef is browned.
  • Add garlic, A Dozen Cousins Pollo A La Brasa Seasoning Sauce, beef stock, soy sauce, and white vinegar.
  • Stir to combine.
  • Cover and Cook on High Pressure for 10 Minutes.
  • Prepare french fries accordingly in Air Fryer.
  • Once timer is done, allow pressure cooker to naturally release for 5 Minutes.
  • Open lid and add tomatoes to the pot. Replace the lid and let it rest for another 5 Minutes, or until the tomatoes are softened.
  • Add prepared french fries and stir to combine.
  • Serve alongside A Dozen Cousins Sea Salt Bone Broth Rice and garnish with cilantro.
