Lentils, Rice and Spices

Ingredients
  • 1 tbsp olive oil
  • 1 green onion (only green part
  • 1 carrot
  • 1 tsp fresh ginger
  • ½ tsp curry powder
  • ½ tsp pepper
  • ¼ tsp cinnamon powder
  • ½ tsp salt
  • ½ cup 1/8 in (4 mm) lentils
  • ½ cup white rice
  • 1¾ cups water or vegetable or bone broth
Instructions
  • Add the oil, chive, carrot, condiments, lentils, and rice to the Instant Pot inner pot. Stir.
  • Press Saute and set time to 4 Minutes. Stir with wooden spoon until time is up.
  • Then add water. Press Pressure Cook and set time to 8 Minutes.
  • Once done, press pressure button to release all the air and open the lid.
  • You can serve immediately along with vegetables or let cool, store in a glass storage container, and put in the refrigerator.
