From-Frozen Chicken Breast with Roasted Vegetables

Ingredients
  • 1 tsp. salt, divided
  • Pinch of black pepper
  • 2 tbsp. olive oil, divided
  • 3 frozen chicken breasts
  • 1.1 lb frozen vegetable mix
  • 1 tbsp. Italian seasoning
  • Spray oil, as needed
Instructions
  • Select Roast. Set the temperature to 400°F / 205°C and set the time to 25 minutes. Press Start.
  • Mix ½ teaspoon of salt, a pinch of black pepper, and ½ tablespoon of olive oil on a plate. Cover the frozen chicken breasts with the salt, pepper, olive oil mixture.
  • When the air fryer is done preheating, spray oil the air frying plate in the basket.
  • Place the chicken breasts into the basket. Close the basket. When the breasts are nicely browned, turn the food for even cooking.
  • Cook until the internal temperature of the chicken exceeds 165°F / 74°C. Cooking time will depend on the size of the chicken. Check the color of the chicken occasionally by turning on the light. Extend or shorten the cooking time if necessary.
  • In a large bowl, mix the Italian seasoning, 1/2 teaspoon of salt and 1 1/2 tablespoons of olive oil.
  • Toss and cover the frozen vegetables with the seasoning-oil mixture.
  • When the chicken is ready, remove from basket and keep warm. Wash the basket and tray and dry thoroughly.
  • Set the temperature to 400°F / 205°C and set the time to 10 minutes. Press Start. Insert the vegetable mix when the unit is hot.
  • When the vegetables are nicely browned, transfer to a plate.
  • Serve with the chicken. Sprinkle more Italian seasoning on the plate if needed. Enjoy!
Notes
  • As an option, drizzle some pesto sauce on the chicken and vegetables before serving
