Ingredients

  • 12 oz. orecchiette pasta, cooked
  • 2 cups cherry tomatoes, halved
  • 16 oz. pearl mozzarella balls
  • 4 large peaches, diced
  • 1 cup fresh basil, chopped
  • ¼ cup red wine vinegar
  • ¼ cup honey
  • ¼ cup olive oil
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp red pepper flakes
  • ¼ tsp cayenne, or more for spice
Bright, bold, and bursting with flavor! This pasta salad mixes juicy tomatoes, creamy mozzarella, sweet peaches, and fresh basil, all tossed in a zesty honey-vinegar dressing. Perfect for any sunny day gathering!

INSTRUCTIONS

  1. Pressure Cook the pasta on High for 5 minutes. When the time is up, carefully quick release the pressure and let the pasta cool.
  2. In a large bowl, combine the cooled pasta, cherry tomatoes, mozzarella, peaches, and basil.
  3. In a separate bowl, whisk together the vinegar, honey, olive oil, salt, pepper, red pepper flakes, and cayenne.
  4. Pour the dressing over the pasta salad and toss until well coated. Serve immediately or store in an airtight container for up to 3 days.
