Hot Honey, Peach, and Prosciutto Pasta Salad

Ingredients
  • 12 oz. orecchiette pasta, cooked
  • 2 cups cherry tomatoes, halved
  • 16 oz. pearl mozzarella balls
  • 4 large peaches, diced
  • 1 cup fresh basil, chopped
  • 1/4 cup red wine vinegar
  • 1/4 cup honey
  • 1/4 cup olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp red pepper flakes
  • 1/4 tsp cayenne, or more for spice
Instructions
  • Pressure Cook the pasta on High for 5 minutes. When the time is up, carefully quick release the pressure and let the pasta cool.
  • In a large bowl, combine the cooled pasta, cherry tomatoes, mozzarella, peaches, and basil.
  • In a separate bowl, whisk together the vinegar, honey, olive oil, salt, pepper, red pepper flakes, and cayenne.
  • Pour the dressing over the pasta salad and toss until well coated. Serve immediately or store in an airtight container for up to 3 days.
