Hot Honey Cornmeal Chicken

Ingredients
  • 1 ½ lb. chicken tenders, cut into 2 inch strips
  • 3 eggs
  • ½ cup half and half
  • ¾ cup all purpose flour
  • 1 tbsp garlic powder
  • 1 tsp paprika
  • 1 tsp salt
  • 2 ¼ cup cornflakes, crushed
  • ¾ cup panko breadcrumbs
  • Salt, as needed
  • Organic vegetable oil spray, non-propellant
  • ½ cup runny honey
  • 2 tsp Sriracha
  • 1 tbsp chili oil
  • 1 tsp apple cider vinegar
Instructions
  • Prepare a breading station. In one bowl, mix the flour, garlic powder, paprika, and salt. In a separate bowl, whisk together the eggs and half and half. In a third bowl, combine the panko breadcrumbs and crushed cornmeal.
  • Coat the chicken in the flour mixture, then the egg mixture, then the breadcrumb mixture. Make sure to pat down the breadcrumb mixture to ensure an even coating. Set aside and continue until all chicken pieces are breaded.
  • Meanwhile, prepare the hot honey. In a small bowl combine the runny honey, Sriracha, chili oil, and apple cider vinegar until smooth. Make sure to beat thoroughly to incorporate the oil. Set aside.
  • Preheat the air fryer at 400˚F / 205 ˚C. Place the breaded chicken in the basket, careful to not overlap or crowd. Spray with non-propellant organic vegetable oil spray.
  • Air fry for 6 minutes. After 6 minutes, turn the chicken over and spray again.
  • After 2 minutes, drizzle the hot honey on the chicken. Air fry for a final two minutes until golden and crispy.
  • Repeat the air frying process until all the chicken has finished. Serve with leftover hot honey and enjoy warm!
