Healthy Tiramisu in a Cup


  • 5 tbsp oat flour
  • 1 tsp baking powder or baking soda
  • 3 tbsp sweetener of choice (monk fruit, coconut sugar, panela, etc.)
  • 1 egg
  • 5 tbsp liquid coffee
  • 1 tbsp water
  • 1 tsp vanilla extract
  • 8 tbsp greek yogurt
  • 3-4 tbsp Sweetener of choice
  • 2 tbsp instant coffee
  • 1 tsp Cocoa Powder
  • Additional ingredient: 5-6 tbsp liquid coffee
  • In an ovenproof cup or bake pan, mix all the ingredients for the cake until you get a thick batter. If it is too runny, add more oat flour. If it is too thick, add water or liquid coffee.
  • On the Instant Vortex control panel, press Bake, then set temperature to 330°F (165ºC) and time to 8 Minutes.
  • Once Add Food appears on the display, add the cake.
  • Unmold the cake, turn it over and put it in for another 5 minutes.
  • Once the cake is ready, cut it into small pieces and set aside.
  • In a separate bowl, mix all the ingredients for the cream and set aside.
  • In a glass or cup, put in a layer of the crushed cake or cake chunks, 1 tbsp liquid coffee and a layer of the cream. Repeat this step until the glass or cup is full.
