Christmas Cake


  • 2 eggs
  • 1 plain yogurt
  • 1 cup sugar
  • 2 cups flour
  • ½ cup olive oil
  • 1 tsp powdered yeast
  • Zest of 1 lemon
  • Confectioners’ sugar for decorating
  • ¾ cup (100 g) nuts, (walnuts almonds, pistachios, etc.),
  • Start by adding the yogurt, sugar and the 2 eggs into a bowl and beat.
  • Next, add the flour, yeast, lemon zest and oil, and use a mixer to incorporate the ingredients well.
  • Put the batter in a pan covered with parchment paper. We recommend using the Instant Vortex Round Cake Pan.
  • On the Instant Vortex control panel, press Bake, set time to 25 Minutes and temperature to 390°F (200°C). Press Start.
  • Once Add Food appears on the display, remove the basket and place the pan in the basket.
  • Let cook for 15 Minutes and make a cross-shaped cut on the top to stop it from puffing up and to ensure it cooks well on the inside.
  • Press Bake again, and set time to 30 Minutes and temperature to 400°F (205°C). Press Start.
  • Once cool, dust with confectioner’s sugar.
