Ingredients
  • 3 chicken breasts, cubed
  • 3 tbsp. olive oil, divided
  • ½ cup Greek yogurt
  • 1 tbsp. red wine vinegar
  • 3 tbsp. lemon juice, divided
  • 1 tsp. salt
  • ½ tsp. black pepper
  • 1 tsp. paprika
  • 1 tsp. oregano
  • 1 tsp. garlic powder
  • 1 tsp. onion powder
  • 1 large cucumber, diced
  • 2 Roma tomatoes, chopped
  • ½ red onion, thinly sliced
  • Salt and pepper, to taste
  • Lemon juice, to taste
  • 2 tbsp. butter
  • 2 garlic cloves, minced
  • ¼ cup fresh parsley, chopped
  • Crumbled feta, for serving
  • Homemade tzatziki, for serving
Instructions
  • In a large bowl, combine the cubed chicken with olive oil, Greek yogurt, red wine vinegar, 2 tablespoons of lemon juice, salt, pepper, paprika, oregano, garlic powder, and onion powder. Mix until the chicken is evenly coated. Cover and refrigerate for at least 10 minutes, or overnight for enhanced flavor.
  • Prepare the salad by combining the cucumber, tomatoes, and red onion in a bowl. Drizzle with 1 tablespoon of olive oil and lemon juice to taste, then season with salt and pepper to taste. Toss well and set aside.
  • Thread the marinated chicken onto skewers, ensuring they fit into your air fryer basket without overcrowding. Work in batches if needed.
  • Preheat the air fryer to 375°F / 190°C. Place the skewers in the basket and Air Fry for 18- 20 minutes, flipping halfway through, until the chicken is golden brown and fully cooked.
  • While the skewers cook, melt the butter in a small saucepan over medium heat. Add minced garlic and sauté until fragrant, about 1 minute. Remove from heat and stir in fresh parsley and 1 tablespoon of lemon juice.
  • Once the chicken is done, brush the skewers with the lemon garlic butter for added flavor.
  • Serve hot with the Mediterranean salad, crumbled feta, and homemade tzatziki on the side. Enjoy!
