Add olive oil, honey, red pepper flakes, salt, and garlic powder to a medium mixing bowl. Stir to combine.
Add pepitas to the bowl and mix to thoroughly coat all the seeds.
Line the bottom of the air fryer basket with a single sheet of aluminum foil. Top with honeyed pepitas and Air Fry at 385°F for 8-9 Minutes, until fragrant and toasted. Repeat with any remaining unroasted pepitas.
Spread out the roasted pepitas on parchment paper to cool. Gently break up any clumps and serve as a snack.
