INSTRUCTIONS Combine the corn starch with the flour. Season the fish, add 2 beaten eggs and coat. On the Instant Vortex control panel, press Air Fry, then set time to 9 Minutes and temperature to 365ºF (185°C). Press Start. Once Add Food. appears on the display, dredge the fish in the dry mixture and add to the basket. Close tray and let cook. Brush the sweet potato with olive oil and season with salt and pepper. On the Instant Vortex control panel, press Bake, then set time to 6 Minutes and temperature to 355˚F (180˚C). Press Start. Once Add Food appears on the display, add the sweet potatoes to the basket. Close tray and let cook. Mix the onion and sweet potato, season with salt, lemon juice and olive oil. Put the sweet potatoes, the fish and the salad on the bread of your choice; garnish with chopped coriander.
