Ingredients

  • ½ cup (120 g) unsalted butter at room temperature
  • 1 cup (210) light brown sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1 cup (130 g) all-purpose flour
  • ½ tsp salt
  • ½ cup (45 g) oat flour
  • 1.5 tsp baking powder
  • 1 cup ( 20 g) whole oats
  • ½ cup (80 g) pecans or walnuts, chopped

INSTRUCTIONS

  1. 1. In a bowl, put the butter and sugar and beat with by hand or with an electric mixer.
  2. 2. Add the egg and vanilla extract and beat.
  3. 3. Add the flour, salt, oat flour, baking powder, oats, pecans and incorporate with a spatula.
  4. 4. To form the cookies, take portions of dough, form into balls and then flatten slightly.
  5. 5. On the Instant Vortex control panel, press Bake, then set time to 6 Minutes and temperature to 355ºF (180°C).
  6. 6. Once the Instant Vortex has been preheated, add the cookies to the basket.
  7. 7. When the time is up, carefully remove the cookies because they will still be a bit soft.
