Chopped BBQ Brisket Sandwiches

Ingredients
  • 1 cup water
  • 3 lb. beef brisket
  • 1 tbsp. smoked paprika
  • 1/2 cup BBQ sauce
  • 6 sesame seed buns
  • Sliced onions, for topping
  • Sliced pickles, for topping
Instructions
  • Pour one cup of water in the Instant Pot, followed by the brisket pieces. Sprinkle with smoked paprika.
  • Secure the lid, making sure the vent is closed. Using the display panel, select the Manual function*. Use the +/- keys and program the Instant Pot for 60 minutes.
  • When the time is up, let the pressure naturally release for 15 minutes, then quick-release the remaining pressure.
  • Carefully remove the meat from the pot to a shallow dish and chop.
  • Stir in the BBQ sauce and 1/4 cup to 1/2 cup of cooking juices to reach your desired consistency.
  • Pile the mixture onto toasted sesame seed buns and garnish as desired.
Notes
  • The Manual and Pressure Cook buttons are interchangeable.
