Chipotle Pork Chops


  • 2 tbsp coconut oil
  • 3 chipotle chilies
  • 2 tbsp adobo sauce
  • 2 tsp cumin
  • 1 tsp dried thyme
  • 1 tsp salt
  • 4 boneless pork chops
  • 1/2 medium onion
  • 2 bay leaves
  • 1 cup chicken broth
  • 7 ounce fire-roasted diced tomatoes
  • 1/3 cup chopped cilantro
  • Press the Sauté button and add coconut oil to Instant Pot. While it heats, add chilies, adobo sauce, cumin, thyme, and salt to food processor. Pulse to make paste. Rub paste into pork chops. Place in Instant Pot and sear each side 5 minutes or until browned.
  • Press the Cancel button and add onion, bay leaves, broth, tomatoes, and cilantro to Instant Pot. Click lid closed. Press the Manual button and adjust time for 15 minutes. When timer beeps, allow a 10-minute natural release, then quick-release the remaining pressure. Serve warm with additional cilantro as garnish if desired.
