Set the Instant Pot to Sauté, More and add the oil once the pot is hot.
Add the onions and sauté for 2 Minutes, till soft.
Add the paprika, cayenne pepper, chili powder, coriander powder, garam masala, cumin seeds, turmeric powder, red wine vinegar and the chicken thighs, combine all.
Add chicken stock, salt and sugar.
Pressure Cook on High for 6 Minutes. When the time is up, let the pressure naturally release.
Garnish with chopped cilantro and enjoy with rice or nan bread.
