Ingredients
  • 1 ½ lbs. boneless, skinless chicken thighs, cut into strips
  • ½ tsp. ground cinnamon
  • 1 tsp. ground coriander
  • 1 ½ tsp. ground turmeric
  • ½ tsp. ground ginger
  • 1 tsp. paprika
  • 1 ½ tbsp. ground cumin
  • ¼ tsp. cayenne pepper
  • 2 tsp. salt, plus more to taste
  • 1 lemon, juiced
  • ½ cup full fat yogurt
  • 4 tbsp. olive oil, divided
  • 2 red bell peppers, sliced
  • 1 red onion, sliced into 8 wedges
  • 1 English cucumber, sliced
  • 1 cup cherry tomatoes, halved
  • 1 cup shredded romaine lettuce
  • 2 lemons, cut into wedges, for serving
  • 8 pita breads, for serving
  • 1 ½ cups tzatziki, for serving
Instructions
  • In a large bowl, mix cinnamon, coriander, turmeric, ginger, paprika, cumin, cayenne pepper, 2 tsp salt, lemon juice, yogurt, and 2 tbsp olive oil into a thick marinade. Add the chopped chicken and toss to coat evenly. Refrigerate for 30 minutes, or up to 3 hours.
  • In another bowl, toss the sliced red bell peppers and onion wedges with 2 tbsp olive oil and salt to taste.
  • Preheat the air fryer to 400°F / 200°C. Spread the marinated chicken on one side of the air fryer basket. Add the peppers and onions on the other side of the basket. It is okay if the basket is crowded.
  • Cook at 400°F / 200°C for 16-18 minutes undisturbed, or until the chicken is cooked through and the vegetables are tender with charred bits.
  • Plate the chicken and vegetables on a platter. Arrange with cucumber slices, cherry tomatoes, and shredded lettuce on top. Serve with pita bread, lemon wedges, and tzatziki. Enjoy!
